Method

  1. 1

Butter and line a 20 cm square tin with baking paper. You will also need a sugar thermometer.

  2. 2

Put the sugar, condensed milk, butter and milk in a deep, heavy pan. Heat gently, stirring, until the sugar has dissolved completely.

  3. 3

Bring to a gentle boil and cook, stirring constantly, until the thermometer reads 116C, the soft ball stage. This takes 15 to 20 minutes.

  4. 4

Take off the heat, add the chocolate and vanilla and leave to melt for 1 minute without stirring.

  5. 5

Beat hard with a wooden spoon for 5 to 8 minutes until the fudge thickens, loses its shine and starts to feel grainy. Pour into the tin straight away.

  6. 6

Leave to set for 3 hours at room temperature, then cut into 30 squares. Keeps for 2 weeks in an airtight tin.
