Method

  1. 1

Scoop the ice cream into 8 small balls onto a lined tray, using a small ice cream scoop. Freeze for at least 1 hour until rock hard.

  2. 2

Whisk the rice flour, sugar and water in a large microwave safe bowl until smooth. Cover loosely and microwave for 1 minute. Stir well, then microwave for another minute and stir again.

  3. 3

Microwave for a final 30 seconds, until the dough is thick, glossy and slightly see through. It should stretch like warm chewing gum.

  4. 4

Dust a clean work surface thickly with the cornflour for dusting. Tip the hot dough out and dust the top too. Leave it for 5 minutes so you can handle it.

  5. 5

Roll the dough to 5 mm thick and cut or tear it into 8 even squares. Brush off the extra cornflour.

  6. 6

Work fast with one square at a time. Set a frozen ice cream ball in the middle, pull the dough up around it and pinch the seams shut. Put it seam side down on a tray.

  7. 7

Freeze the finished mochi for at least 30 minutes. Take them out for 5 minutes before eating so the dough softens.
