Method
- 1
Pour the milk into a wide, heavy pan and bring to the boil. Simmer for 20 minutes, stirring often, until reduced to about 500 ml.
20 min - 2
Meanwhile, put 3 tablespoons of the sugar and the water in a small pan over a medium heat. Do not stir; swirl the pan until the sugar turns a deep amber caramel, about 4 minutes.
4 min - 3
Carefully pour the hot caramel into the reduced milk, stand back as it spits, and stir over a low heat until the caramel has dissolved. Stir in the remaining sugar.
- 4
Take off the heat and cool until the milk feels just warm to a clean finger, about 40 degrees. If it is too hot it will kill the yoghurt cultures.
- 5
Whisk the yoghurt in a bowl with a ladleful of the milk until smooth, then stir it back into the pan. Pour into 4 small bowls or ramekins and cover each.
- 6
Leave somewhere warm and undisturbed, such as an oven with only the light on, for 8 to 10 hours or overnight, until set. Chill for 2 hours before serving.
