Method
- 1
Mix the semolina, flour, sugar and a good pinch of salt in a bowl. Add the warm water and 2 tbsp olive oil and knead for 10 minutes, until the dough is soft, smooth and stretchy. Cover and rest for 30 minutes.
30 min - 2
Heat 2 tbsp olive oil in a frying pan. Cook the onion and pepper for 8 minutes until soft. Add the garlic, paprika, cumin and harissa for 1 minute, then the tomatoes. Simmer for 15 minutes until thick, almost like a relish. Season, add the coriander and cool.
23 min - 3
Divide the dough into 8 balls and coat them in sunflower oil. Working on an oiled surface, flatten and stretch a ball with oiled hands into a thin rectangle about 25 cm by 20 cm.
- 4
Spread a spoonful of filling over the middle third. Fold in the two sides to make a long strip, then fold again into a neat square parcel. Repeat with the rest.
- 5
Heat a little sunflower oil in a non stick frying pan over a medium heat. Cook the parcels for 3 to 4 minutes on each side, until golden and crisp. Serve hot, with extra harissa if you like.
