Method

  1. 1

Mix the flour, yeast, sugar and salt in a large bowl. Beat the egg with the yoghurt, warm water and 1 tbsp of oil, then stir into the flour to make a soft, slightly sticky dough.

  2. 2

Knead in the bowl for 3 to 4 minutes, until smooth. Cover with a damp tea towel and leave somewhere warm for 1 hour, until doubled in size.

    60 min
  3. 3

Heat about 2 cm of oil in a deep frying pan over a medium heat. It is ready when a small piece of dough sizzles and rises straight away.

  4. 4

Oil your hands and tip the dough onto a floured surface. Pull off pieces the size of a small egg and stretch each by hand into an oval about 10 cm long.

  5. 5

Fry 3 or 4 at a time for 1 to 2 minutes on each side, until puffed and golden brown. Drain on kitchen paper.

    3 min 30 s
  6. 6

Serve warm, sprinkled with the crumbled feta, or spread with jam.
