Method
- 1
For the pickle, stir the vinegar, sugar and salt together until dissolved. Add the cucumber, shallot and chilli and leave for 30 minutes.
30 min - 2
Heat 1 tablespoon oil in a frying pan and fry the onion for 5 minutes. Add the garlic, curry powder and turmeric and stir for 1 minute.
- 3
Add the lamb and fry for 8 minutes, breaking it up, until browned and dry. Season, tip into a bowl and cool for 10 minutes.
8 min - 4
Stir the beaten eggs and spring onions into the cooled meat.
- 5
Lay two wrappers on top of each other, offset like a star. Spoon a quarter of the filling into the centre, fold the corners over to make a neat square and seal with a dab of water.
- 6
Heat the frying oil in a large frying pan over a medium heat. Fry each parcel, seam side down, for 3 minutes, then turn and fry for 3 minutes more until crisp, golden and the egg is set.
6 min - 7
Cut into squares and serve hot with the pickle.
