Method
- 1
Mix the flour, yeast, 40 g sugar and salt. Whisk in the egg and warm water to a smooth batter. Cover and leave for 1 hour until doubled and bubbly.
60 min - 2
Stir the bicarbonate of soda into 1 tbsp water and mix into the batter. Rest for 10 minutes.
- 3
Heat a 24 cm non-stick pan with a lid on a medium low heat and brush with oil. Pour in half the batter. Bubbles will rise and pop, leaving a honeycomb of holes, after about 2 minutes.
- 4
Cover and cook on low for 8 minutes, until the top is dry and set and the base is deep golden. Do not flip.
8 min - 5
Slide onto a board and spread half the butter over the hot top so it melts. Sprinkle with half the sugar, chocolate sprinkles and peanuts and drizzle with half the condensed milk.
- 6
Fold in half and cut into wedges. Make the second pancake in the same way.
