Marshmallow rocky road with digestive biscuits

Line a 20 cm square tin with baking paper.

Melt the chocolate, butter and syrup in a large pan over a low heat, stirring, until glossy.

Take off the heat and cool for 5 minutes so the marshmallows do not melt.

Stir in the biscuit chunks, marshmallows and cherries until coated.

Tip into the tin and press down firmly. Chill for 2 hours until firm.

Dust with icing sugar and cut into 16 squares.
