Method

  1. 1

Soak the shiitake and the dried shrimp separately in hot water for 20 minutes. Squeeze dry and chop both finely. Line a 20 cm square tin with baking paper and oil it lightly.

  2. 2

Heat 1 tbsp of the oil in a wok. Fry the sausage for 3 minutes until the fat runs, then add the shrimp and mushrooms for 2 minutes. Take out and set aside.

  3. 3

Put the grated mooli and 150 ml of the water in the wok. Cook for 8 minutes until soft and translucent, then take off the heat.

  4. 4

Whisk the rice flour, cornflour and 300 ml cold water into a smooth batter. Stir it into the mooli with the soy sauce, sugar, pepper, sesame oil, sausage mix and two thirds of the spring onions.

  5. 5

Pour into the tin and smooth the top. Steam over simmering water, covered, for 50 minutes until firm in the middle. Cool completely, ideally for 2 hours or overnight in the fridge.

  6. 6

Cut into slices 1.5 cm thick. Fry in the remaining oil for 3 to 4 minutes each side until golden and crisp. Top with the last spring onions and serve with oyster sauce and chilli oil.
