Method

  1. 1

Boil the whole unpeeled potatoes for 30 minutes until a knife slides in easily. Drain, peel while hot and press through a ricer or mash until completely smooth. Leave to cool for 20 minutes.

  2. 2

Meanwhile fry the bacon in a dry frying pan for 5 minutes until golden. Add the onion and fry for 5 minutes until soft. Stir in the allspice and pepper and leave to cool.

  3. 3

Mix the cooled potato with the egg, flour and salt to a soft, slightly sticky dough. Do not overwork it.

  4. 4

With floured hands, take a piece of dough the size of a small apple, flatten it in your palm, put a spoonful of the filling in the middle and close the dough round it. Roll into a smooth ball. Make 12.

  5. 5

Bring a wide pan of water with 2 tablespoons salt to a gentle simmer. Lower in half the dumplings and cook for 15 minutes. They float when nearly ready. Lift out with a slotted spoon.

Melt the butter in a small pan until it smells nutty. Serve the dumplings with the butter poured over and the lingonberry jam on the side.
