Method
- 1
Mix the flour and salt in a bowl, add the 1 tbsp of oil and the warm water, and bring together into a soft dough. Knead for 5 minutes until smooth, then cover and rest for 20 minutes.
20 min - 2
Toss the sliced onion with the lime juice and chaat masala and set aside. Beat the eggs with the chilli, coriander and salt in a jug.
- 3
Divide the dough into 4 balls. Roll each into a thin 22 cm round, brush with oil, fold in half and in half again, then roll out again into a round about 20 cm across.
- 4
Heat a frying pan over a medium heat with 1 tbsp of oil. Cook a paratha for 1 minute on one side, flip and cook for 30 seconds more. Take it out.
- 5
Add a little more oil to the pan and pour in a quarter of the egg, swirling to cover the base. When it is half set, lay the paratha on top, press down and cook for 1 minute, then flip so the egg side faces down for 30 seconds more.
1 min 30 s - 6
Slide onto a plate egg side up, spoon over some onion and ketchup, and roll up tightly. Cook the rest the same way and eat while hot.
