Method
- 1
Mix the flour, yeast, sugar and salt in a bowl. Add the egg, warm milk and butter and mix into a soft dough, then knead for 8 minutes until smooth and stretchy.
8 min - 2
Put in an oiled bowl, cover and leave somewhere warm for 1 hour until doubled in size.
60 min - 3
Tip onto a floured board and knock out the air. Divide into 8 pieces and roll each into a rope about 25 cm long.
- 4
Fold each rope in half and twist the two halves around each other, pinching the ends to seal. Set on a floured tray for 15 minutes.
- 5
Heat the oil in a deep pan to a medium heat, about 170 degrees C. A scrap of dough should sizzle and turn golden in about 40 seconds. Never leave hot oil alone.
- 6
Fry 3 doughnuts at a time for 3 minutes, turning once, until deep golden. Drain on kitchen paper.
3 min - 7
Mix the sugar and cinnamon on a plate and roll the warm doughnuts in it. Eat the same day.
