Method
- 1
Blitz the cashews in a dry food processor in short bursts until they are a fine powder. Sieve to remove lumps and stop before it turns oily.
- 2
Put the sugar and water in a non stick pan and heat until the sugar dissolves. Simmer for 6 to 8 minutes until it reaches one thread consistency, meaning a drop pinched between finger and thumb forms a single sticky thread.
7 min - 3
Turn the heat to low and tip in the cashew powder and cardamom. Stir constantly for 6 to 8 minutes until the mixture is a soft dough that pulls cleanly away from the pan.
7 min - 4
Stir in the ghee and take off the heat. Leave to cool for 5 minutes until just warm to touch.
- 5
Knead briefly on baking paper until smooth. Roll between two sheets of baking paper to about 4 mm thick.
- 6
Leave for 30 minutes to firm up, then cut into diamonds with a sharp knife.
