Method
- 1
Drain the soaked beans and rinse them. Put them in a large pot with the ham hock, the 1800 ml water, onion, garlic, spring onion, thyme and allspice.
- 2
Bring to the boil, skim off any foam, then simmer gently with the lid half on for 1 hour 15 minutes, until the beans are very soft.
75 min - 3
Lift out the hock. Mash about a third of the beans against the side of the pot to thicken the soup. Pull the meat off the hock, shred it and return it to the pot, discarding the skin and bone.
- 4
Add the carrot, sweet potato, coconut milk and the whole scotch bonnet. Simmer for 15 minutes.
15 min - 5
Meanwhile, mix the flour, salt and water into a firm dough. Roll small pieces between your palms into fat little cigar shapes (spinners).
- 6
Drop the spinners into the soup and cook for 10 minutes, until firm and cooked through. Take the scotch bonnet out before it bursts, unless you like it hot. Taste and season with black pepper.
