Method

  1. 1

Toast the pumpkin seeds in a dry frying pan over a medium heat for 2 minutes until they pop and smell nutty. Tip out and set aside.

  2. 2

Heat the olive oil in the same pan over a high heat. Add the onion and cook for 4 minutes until soft.

  3. 3

Add the lamb mince and fry for 8 to 10 minutes, breaking it up, until well browned and any liquid has cooked away.

    9 min
  4. 4

Stir in the cumin, allspice, cinnamon and salt and cook for 1 minute until fragrant. Squeeze in half the lemon juice.

  5. 5

Spoon your ready made hummus (see the base recipe) into a wide shallow bowl, swirling a dip in the middle with the back of a spoon. Gently warm the hummus first if it is very cold.

  6. 6

Pile the hot lamb into the dip, drizzle with the extra virgin olive oil and the rest of the lemon juice, and scatter with the pumpkin seeds and parsley. Serve with warm flatbread or vegetable sticks.

Tips

  • Brown the lamb properly and let the liquid cook off. Wet mince will steam and taste flat.
  • Bring the hummus to room temperature before serving. Cold hummus is stiff and muted in flavour.
  • Serve with warm pitta or flatbread for scooping, or use gluten free flatbread for coeliacs.

Storing and freezing

Keep the lamb and hummus separately in the fridge for up to 3 days. Cool the lamb within 1 hour and reheat until steaming hot all the way through. Do not freeze with the hummus.

Questions

Can I use beef or chicken mince?

Yes. Beef mince works in the same way. Turkey or chicken mince should be browned well and cooked until there is no pink and the juices run clear.

Is this hummus dish gluten free?

Yes, as written it is gluten free, dairy free, egg free and nut free. Serve it with gluten free flatbread or crudités. It contains sesame from the hummus.
