Method
- 1
Heat the oven to 200°C (180°C fan). Heat the olive oil in an ovenproof frying pan over a medium heat. Fry the chorizo slices for 3 minutes until the oil is released and they are crisp at the edges.
3 min - 2
Add your ready made sofrito (see the base recipe), the peas and the roasted peppers. Stir and simmer for 5 minutes until hot and thick.
5 min - 3
Make eight small wells in the sauce with the back of a spoon. Crack an egg into each.
- 4
Bake for 8 to 10 minutes, until the whites are set and the yolks are still soft. Cook a little longer for firm yolks.
9 min - 5
Scatter over the parsley and serve straight from the pan with crusty bread.
Tips
- Make the wells before cracking in the eggs so the whites stay put and set evenly.
- Check the egg whites are set, not wobbly, before serving. For vulnerable people, cook until the yolks are firm.
- Add a pinch of smoked paprika or a dash of sherry vinegar to the sauce for extra depth.
Storing and freezing
Best eaten straight away. Leftover sauce keeps in the fridge for up to 2 days, but do not reheat the cooked eggs.
Questions
What is the origin of the name flamenca?
The dish comes from Andalusia, where flamenco originated. The colourful mix of red, green and yellow in the pan reflects the bright dress of flamenco dancers, though no single origin story is certain.
Can I cook it on the hob?
Yes. Cover the pan with a lid after cracking in the eggs and cook gently for 5 to 7 minutes over a low heat until the whites are set.
Is it suitable for coeliacs?
Yes, as written. Check that your chorizo is labelled gluten free, as some brands add wheat. It is also dairy free and nut free.
