Method

Whisk the 50 g of cornflour with 100 ml of the cold milk until smooth. Put the other 400 ml of milk in a pan with the cinnamon stick, lemon peel and 60 g sugar and warm until steaming.
- 2
Remove the cinnamon and lemon. Pour in the cornflour mixture, whisking. Cook over a low heat, stirring constantly, for 4 to 5 minutes until very thick.
4 min 30 s - 3
Grease and line an 18 cm square tin with baking paper and brush the paper with 1 tsp oil. Pour in the custard, level the top and cool for 30 minutes. Chill for at least 2 hours until completely firm.
120 min - 4
Turn the set custard out and cut into 12 squares. Dip each in the 40 g cornflour, then the beaten egg.
- 5
Heat the frying oil in a wide pan over a medium heat. Fry the squares in batches for 1 minute on each side until deep golden. Drain on kitchen paper.
2 min - 6
Mix the 2 tbsp sugar and ground cinnamon on a plate and roll the hot squares in it. Serve warm.
