Method
- 1
Lightly oil a 20 cm square tin and line it with baking paper. Measure the bicarbonate into a small bowl beside the hob and have a whisk ready.
- 2
Put the sugar and golden syrup into a large, deep heavy pan. Heat gently, stirring only until the sugar dissolves.
- 3
Turn the heat to medium and boil without stirring for 5 to 7 minutes until it turns a deep amber colour and smells of caramel. If you have a thermometer, aim for 150 C.
6 min - 4
Take off the heat at once, tip in the bicarbonate and whisk quickly for a couple of seconds. It will foam up fast.
- 5
Pour into the tin straight away and do not spread it, or the bubbles will collapse. Leave undisturbed for 1 hour until completely hard.
60 min - 6
Lift out and break into shards with a rolling pin. Store in an airtight tin, as it goes sticky if it gets damp.
