Method

  1. 1

Toast the coriander seeds in a dry pan for 2 minutes until fragrant, then crush them in a pestle and mortar. Soak the casings in cold water for 30 minutes and rinse through.

  2. 2

Put both minces in a large bowl with the crushed coriander, spices, salt, pepper and garlic. Add the vinegar and cold water.

  3. 3

Mix with your hands for 3 minutes until sticky and well combined. Fry a small piece in a pan to taste and adjust the seasoning.

  4. 4

Fill a sausage stuffer or large piping bag, slide a casing onto the nozzle and fill in one long coil. Do not pack it too tight. Twist off into 4 or 5 lengths if you like.

  5. 5

No casings? Shape the mix into 8 thick patties instead.

  6. 6

Chill for 30 minutes. Cook over a medium barbecue, or in a frying pan, turning often, for 15 to 18 minutes until browned and no longer pink inside.
