Method

  1. 1

Put the goat, onion, cinnamon, cardamom, peppercorns and salt in a large pot with the water. Bring to the boil, skim off the grey scum, then cover and simmer gently for 2 hours, until the goat is very tender.

  2. 2

In a bowl, whisk the yoghurt with the cornflour and egg white until smooth. This helps stop it splitting when heated.

  3. 3

Lift the goat out and keep it warm. Strain the stock and measure out 500 ml, keeping the rest. Pour the 500 ml into a clean pan and bring it to a simmer.

  4. 4

Whisk in the yoghurt mixture, stirring in one direction only, and keep stirring for about 5 minutes until it thickens slightly. Add the goat and keep it at a bare simmer for 10 minutes. Do not boil hard.

  5. 5

Meanwhile, rinse the rice. Cook it in 450 ml of the leftover stock with the turmeric for 12 minutes with the lid on, then rest for 5 minutes.

  6. 6

Toast the almonds in the butter in a small pan for 2 minutes until golden.

  7. 7

Pile the rice on a platter, top with the goat and yoghurt sauce, then scatter over the almonds and parsley.
