Method

  1. 1

Put the bananas, oats, eggs, baking powder, gluten free oat milk and cinnamon in a blender and blitz to a thick, smooth batter. Leave it to stand for 5 minutes so the oats soften.

  2. 2

Melt a little of the dairy free spread in a large non stick frying pan over a medium heat.

  3. 3

Spoon in the batter in small rounds, about 6 cm across. Press a few halved blueberries into each one.

  4. 4

Cook for 2 to 3 minutes until bubbles appear and the underside is golden, then flip and cook for 2 minutes more.

  5. 5

Repeat with the rest of the batter, adding more spread as needed. Keep the cooked ones warm under a clean tea towel.

  6. 6

Cool before serving. Cut into strips for baby led weaning from 6 months, and squash or halve the blueberries for children under 5. Never add honey for babies under 12 months. Cooked pancakes freeze well for 2 months.
