Method

  1. 1

Put the sugar and water in a pan and heat gently, stirring, until the sugar has dissolved. Simmer for 5 minutes, then take off the heat. Stir in the rose water and the juice of 2 limes and leave to cool completely.

Pour the syrup into a shallow freezer-safe tub and freeze for about 1 hour, until the edges are icy but the middle is still slushy.

  3. 3

Cook the vermicelli in boiling water for 2 to 3 minutes until just soft. Drain, rinse under cold water and snip into short lengths of about 4 cm with scissors.

  4. 4

Stir the noodles into the half-frozen syrup, then return to the freezer.

  5. 5

Every 45 minutes for the next 3 hours, scrape the mixture well with a fork so it breaks into fine, glittering ice crystals with the noodles running through it.

Spoon into chilled bowls, squeeze over the last of the lime juice, scatter with rose petals and serve straight away with lime wedges.
