Method

  1. 1

Put the potatoes in a pan of cold salted water. Bring to the boil and simmer for 15 minutes. Add the carrots and cook 5 minutes more, then the peas for 2 minutes, until the potatoes are just tender. Drain well.

Meanwhile, lower the eggs into boiling water and cook for 9 minutes. Cool them under cold running water, then peel and chop.

  3. 3

Peel the potatoes while they are still warm, using a fork to hold them, and cut them into small cubes. Spread everything out on a tray for 10 minutes so the steam escapes.

In a large bowl, mix the mayonnaise, lemon juice and salt. Fold in the potatoes, carrots, peas, flaked tuna, chopped egg and half of the peppers. Be gentle so the potato stays in neat pieces.

  5. 5

Press the salad into a bowl lined with cling film, or spoon it onto a plate in a dome. Chill for at least 1 hour.

Top with the remaining peppers and the parsley. Serve cold with crisp breadsticks or just a fork.
