  2. 2

Cook your homemade Mexican chorizo (see the base recipe) in a cold pan for 8 minutes, breaking it up. Add the onion for 3 minutes and the potato. Season.

    11 min
  3. 3

Warm your red enchilada sauce (see the base recipe) in a wide pan until steaming. Spread a little over the base of a baking dish.

  4. 4

Dip each warm corn tortilla (see the base recipe) in the sauce for a few seconds, fill with 2 tbsp of filling, roll up and place seam side down in the dish.

  5. 5

Pour over the remaining sauce and scatter with both cheeses.

  6. 6

Bake for 20 minutes until bubbling and the edges are lightly browned. Scatter with coriander and serve.

    20 min

Tips

  • Dip the tortillas briefly in hot sauce so they soften without tearing.
  • Fill and roll no more than a few at a time, because tortillas dry out and crack if left.
  • Serve with shredded lettuce and a spoonful of crema.
