Method
- 1
Melt the butter in a wide pan over a medium heat. Cook the onion for 8 minutes until soft, then add the garlic.
8 min - 2
Add the mushrooms and cook for 10 minutes, stirring often, until all the water has cooked off and they look dry and golden.
10 min - 3
Stir in the flour and cook for 2 minutes. Add the warm milk a little at a time, stirring hard so there are no lumps. Add the nutmeg and salt, then cook for 6 to 8 minutes, stirring, until it is a very thick paste that pulls away from the pan.
7 min - 4
Spread the paste in a dish, cover the surface with cling film and chill for at least 3 hours, or overnight.
180 min - 5
With wet hands, roll heaped tablespoons of the cold paste into 24 small logs. Roll each in the flour, then the egg, then the breadcrumbs. Repeat the egg and crumbs for a thicker crust if you like.
- 6
Heat the oil in a deep pan to 180C, or until a crumb sizzles and browns in 20 seconds. Fry in batches for 2 to 3 minutes until deep golden. Drain on kitchen paper and serve hot.
