Method

  1. 1

Put the soaked cod in a pan, cover with cold water and bring to a gentle simmer. Cook for 10 minutes, then drain and flake, removing any skin and bones.

  2. 2

Boil the potatoes for 15 minutes until soft, drain well and mash until smooth.

    15 min
  3. 3

Melt the butter in a pan. Cook the onion for 8 minutes until soft. Stir in the flour for 1 minute, then add the milk a little at a time, stirring, to make a thick white sauce.

    8 min
  4. 4

Off the heat, mix in the cod, mash, parsley and lemon zest. Taste before adding salt, as the cod is already salty. Add pepper.

  5. 5

Spread on a plate and chill for at least 2 hours, until very firm.

    120 min
  6. 6

Shape into 18 small barrels. Dip each in egg, then breadcrumbs, then again in egg and breadcrumbs for a thicker shell.

  7. 7

Heat the oil to 180°C (160°C fan). Fry 5 or 6 at a time for 3 minutes until deep golden. Drain on kitchen paper and serve hot.
