Method
- 1
Heat 1 tbsp oil in a wok over a high heat. Stir fry the carrots and cabbage for 2 minutes. Add the garlic and ginger for 30 seconds.
- 2
Add the prawns and stir fry for 2 minutes until pink. Add the soy sauce, sesame oil and spring onions and toss.
2 min - 3
Tip into a colander and leave for 15 minutes so the juices drain away. A dry filling keeps the rolls crisp.
15 min - 4
Put a wrapper like a diamond in front of you. Spoon 2 tablespoons of filling near the bottom corner. Fold the corner over, tuck in the sides and roll up tightly. Seal the last corner with egg white.
- 5
Heat the frying oil in a deep pan to 175°C (155°C fan).
- 6
Fry 3 or 4 rolls at a time for 3 to 4 minutes, turning, until deep golden. Drain on kitchen paper.
3 min 30 s - 7
Serve hot with sweet chilli sauce.
