Method

  1. 1

Heat the oven to 220°C (200°C fan). Put a large baking tray in to heat for 5 minutes.

  2. 2

Toss the cauliflower in a bowl with the oil, smoked paprika, cumin, garlic granules and a good pinch of salt.

  3. 3

Tip the florets onto the hot tray in a single layer. Roast for 25 to 30 minutes, turning once, until golden brown and tender at the stalk.

  4. 4

Arrange the cauliflower on a serving dish. Spoon over your ready made elote sauce (see the base recipe) and add the lime zest and juice.

  5. 5

Scatter over the coriander, dust with the chilli powder and serve while the cauliflower is still warm.

Tips

  • A preheated tray gives the cauliflower a deep brown edge that matches the charred corn flavour.
  • Do not crowd the tray, or the florets steam instead of roasting. Use two trays if needed.
  • Cut the florets to a similar size so they cook evenly.
  • Make it dairy free and egg free by using the swaps in the elote sauce base recipe.

Storing and freezing

Keeps in the fridge for up to 2 days without the sauce. Reheat the cauliflower until steaming hot all the way through, then add fresh sauce. Do not freeze with the sauce.

Questions

Can I roast the cauliflower ahead of time?

Yes. Roast it, cool within 1 hour, then reheat in a hot oven for 10 minutes and sauce it just before serving.

Can I use broccoli instead?

Yes. Roast it for 15 to 20 minutes, until the tips are crisp and browned.

Is it vegetarian?

Yes. The elote sauce uses mayonnaise, soured cream and feta, all vegetarian, but check that your feta is made with vegetarian rennet.
