  4. 4

Pour in your ready made green enchilada sauce (see the base recipe), bring to a simmer and return the chops. Cover and cook gently for 8 to 10 minutes, until the chops are cooked through with no pink and the juices run clear.

  5. 5

Meanwhile warm your ready made frijoles de la olla (see the base recipe) in a small pan until steaming hot all the way through.

  6. 6

Serve the chops and sauce on the beans, scattered with coriander and with lime wedges.

Tips

  • Pork loin chops are lean. Do not overcook them, or they dry out. Cook until just white in the middle with clear juices.
  • Pat the chops dry before seasoning so they sear rather than steam.
  • Let the chops rest in the sauce for 3 minutes off the heat before serving.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Reheat gently until steaming hot all the way through.

Questions

Can I use boneless chops or pork steaks?

Yes. Boneless chops or shoulder steaks both work. Thinner steaks need only 5 to 6 minutes of simmering.

How do I know the pork is cooked?

The meat should be white throughout with no pink, and the juices should run clear. A probe should read 70C in the thickest part.

Is this dish dairy free?

Yes. There is no dairy, egg, gluten or nuts, as long as the sauce and beans were made without them.
