Method

  1. 1

Heat the oven to 200°C (180°C fan). Toss the aubergine, courgette, pepper and onion with 2 tablespoons of the oil, the herbs, salt and pepper. Spread in a large roasting tin and roast for 20 minutes.

  2. 2

Rub the chicken with the remaining oil and season well.

  3. 3

Stir your ready made basic tomato sauce (see the base recipe) through the vegetables and nestle in the garlic cloves.

  4. 4

Lay the chicken skin side up on top. Return to the oven for 35 to 40 minutes until the skin is crisp and the chicken is cooked through with no pink and clear juices.

    40 min
  5. 5

Rest for 5 minutes. Squeeze the soft garlic into the sauce, tear over the basil and serve with crusty bread or rice.

Tips

  • Roast the vegetables first so they are tender and slightly charred before the sauce goes in.
  • Keep the chicken skin above the sauce so it crisps.
  • Salt the aubergine pieces for 15 minutes first if you want less oil absorbed.

Storing and freezing

Cool within 90 minutes and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. The vegetables freeze for 3 months.

Questions

Can I use chicken breast?

Yes, but roast for only 25 to 30 minutes, until cooked through with no pink. Thighs are more forgiving.

Is it vegetarian without the chicken?

Yes. Leave the chicken out and add a tin of drained butter beans for the last 15 minutes.

Can I prepare it ahead?

Yes. Chop the vegetables a day ahead. Roast and add the chicken just before serving.
