Method

  1. 1

Make the shortcrust pastry and bechamel first (see the base recipes). Chill the pastry for 30 minutes. Heat the oven to 200°C (180°C fan) and put a baking tray in to heat.

  2. 2

In a bowl, mix the chicken, ham, peas, mustard and parsley. Stir in your ready made bechamel. Season with black pepper. The mixture should be thick but not stiff. Cool for 15 minutes if the sauce is warm.

  3. 3

Roll out two thirds of the pastry and line a 23 cm pie tin, leaving the edges overhanging a little.

  4. 4

Spoon in the filling and level the top. Brush the rim with milk.

  5. 5

Roll out the remaining pastry for a lid, lay over the pie and press the edges to seal. Trim, crimp and cut a small steam hole. Brush all over with milk.

  6. 6

Bake on the hot tray for 40 to 45 minutes until deep golden. Rest for 10 minutes before cutting.

Tips

  • A hot baking tray under the pie helps the base cook through and prevents a soggy bottom.
  • Make sure the filling has cooled before it goes in the pastry or the pastry will start to melt.
  • Use cooked chicken thighs or leftover roast chicken. Trim the ham of any fat.

Storing and freezing

Keeps up to 3 days in the fridge once cooled within 2 hours, or 2 months frozen in portions. Reheat until piping hot all the way through.

Questions

How do I avoid a soggy bottom?

Bake on a preheated tray, keep the filling thick and cooled, and roll the pastry slightly thicker for the base. A metal pie tin conducts heat better than glass.

Can I use puff pastry?

Yes, for a lid only. Use a pie dish and a sheet of ready rolled puff on top, baking for about 30 minutes.

Can I add vegetables?

Yes. Sauteed leeks, mushrooms or sweetcorn work well. Keep the total filling to about 800 g so the pie is not overfull.
