Method

  1. 1

Beat the eggs with the milk, salt and 1 tbsp sugar. Stir in the flour to make a firm dough, knead for 3 minutes, then cover and rest for 20 minutes.

  2. 2

Roll the dough thin, about 3 mm thick. Cut into strips, roll each strip into a thin rope, then cut the ropes into pieces about the size of a grain of rice or a small bean.

  3. 3

Heat the oil in a deep pan to 170C. Fry the pieces in small batches for 1 to 2 minutes until golden and crisp. Drain well on kitchen paper.

  4. 4

Heat the honey, 100 g sugar, water and lemon juice in a large pan until the sugar dissolves, then simmer for 3 to 4 minutes until slightly thickened.

  5. 5

Tip the fried pieces into the hot syrup and stir quickly until everything is coated.

  6. 6

Tip onto a serving plate or into a bowl lined with cling film, press into a mound or ring and cool for 30 minutes until it sets enough to cut into wedges.
