Method

  1. 1

Make the syrup. Stir the 250 g sugar and water over a medium heat until dissolved, add the lemon juice and simmer for 8 minutes. Leave to cool completely.

  2. 2

Heat the oven to 180°C (160°C fan). Grease a 20 by 30 cm baking tin. Mix the chopped pistachios with the 1 tbsp sugar.

  3. 3

Pull the pastry strands apart gently so they are loose and fluffy. Divide into 12 portions and lay one out on the work surface in a 20 cm long strip, about 6 cm wide.

  4. 4

Brush the strip with melted butter, spoon a line of pistachios along one long side and roll up tightly like a cigar. Place seam down in the tin. Repeat with the rest.

  5. 5

Pour the remaining butter over the rolls. Bake for 30 to 35 minutes, until golden and crisp.

  6. 6

Pour the cold syrup over the hot rolls straight from the oven. Leave for at least 1 hour so they soak it up, then serve.
