Method
- 1
Rinse the tongue and put it in a large pan with the onion, carrots, celery, bay, peppercorns, vinegar and salt. Cover with cold water by 5 cm.
- 2
Bring to the boil, skim off any scum, then turn down to a bare simmer. Cover and cook for 3 hours, until a skewer slides into the thickest part easily.
180 min - 3
Lift the tongue onto a board. While it is still hot (use a clean tea towel to hold it), slit and peel off the thick white skin. Trim off any gristle at the base.
- 4
Strain and keep 500 ml of the cooking liquid. Boil the new potatoes in salted water for 15 minutes.
15 min - 5
For the sauce, melt the butter in a small pan. Stir in the cornflour for 30 seconds, then whisk in the hot cooking liquid and the milk a little at a time. Simmer for 5 minutes until thick and smooth.
5 min - 6
Stir in the capers, parsley and lemon juice. Taste and add pepper.
- 7
Slice the tongue about 1 cm thick, warm it in a little of the cooking liquid if needed, and serve with the potatoes and plenty of sauce.
