Method
- 1
Mix the flour, yeast, sugar, nutmeg and salt in a large bowl. Add the mashed banana and the warm water.
- 2
Beat with a wooden spoon for 3 minutes into a thick, sticky batter. It should drop slowly off the spoon.
- 3
Cover the bowl and leave in a warm place for 1 hour, until doubled and full of bubbles.
60 min - 4
Heat the oil in a deep, heavy pan to 180C. A small drop of batter should sizzle and float straight away.
- 5
Scoop up a heaped tablespoon of batter with a wet spoon and push it off into the oil. Fry 5 or 6 at a time for 4 minutes, turning, until deep golden.
4 min - 6
Lift out onto kitchen paper, then roll in the caster sugar while still warm. Serve the same day.
