Method
- 1
Mix the flour, yeast, 60 g sugar and salt in a large bowl. Add the milk, eggs, butter and lemon zest and mix to a soft dough.
- 2
Knead for 10 minutes until smooth and elastic. Cover and leave for 1 hour, until doubled.
60 min - 3
Roll the dough out to 2 cm thick. Cut out 12 rounds with a 7 cm cutter, re-rolling the scraps. Place them on floured baking paper, cover, and leave for 40 minutes until puffy.
40 min - 4
Heat the oil in a deep, heavy pan to 170C. Gently lower in 3 doughnuts, top side down, and fry for 2 minutes with the lid off. Turn and fry for 2 more minutes, until golden with a pale band round the middle.
4 min - 5
Drain on kitchen paper, then roll in the coating sugar while still warm. Repeat with the rest, letting the oil come back to temperature.
- 6
Put the jam in a piping bag fitted with a long thin nozzle. Poke the nozzle into the side of each cooled doughnut, through the pale band, and squeeze in a spoonful of jam.
