Method
- 1
Rinse the rice, soak it in cold water for 20 minutes, then drain.
20 min - 2
Heat the mustard oil in a large heavy pan until the sharp smell softens. Add the cardamom, cloves, cinnamon and bay leaves for 30 seconds, then the onions. Fry for 12 minutes until deep golden.
12 min - 3
Stir in the ginger garlic paste, turmeric, chilli powder, cumin, coriander and sugar with a splash of water. Cook for 3 minutes, then add the beef and fry for 8 minutes until browned.
8 min - 4
Add 300 ml of the water and 1 tsp salt. Cover and simmer on a low heat for about 1 hour 15 minutes, until the beef is nearly tender.
75 min - 5
Add the potatoes, rice, green chillies, the rest of the salt and 600 ml boiling water. Stir once and bring to the boil.
- 6
Cook uncovered until the water has been absorbed to the level of the rice, about 8 minutes. Cover tightly and cook on the lowest heat for 15 minutes. Rest for 10 minutes, then fluff gently with a fork.
