  3. 3

Heat the oil in a frying pan and cook the onion for 8 minutes until soft and golden. Add the garlic and cook for 1 minute.

    9 min
  4. 4

Add the poblano strips and salt and cook for 5 minutes, until everything is soft and mingled.

    5 min
  5. 5

Warm your ready made pot beans in a small pan with a splash of their broth (see the base recipe), mashing roughly, until steaming hot all the way through.

  6. 6

Warm your corn tortillas (see the base recipe) in a dry pan or wrapped in foil in the oven until soft and pliable.

  7. 7

Fill each tortilla with beans, rajas and avocado. Top with your pickled red onions (see the base recipe), coriander and a squeeze of lime.

Tips

  • Rajas means strips. Cooking them with plenty of onion brings out the mild, smoky sweetness of the poblano.
  • Sweating the charred chillies under a plate makes the skins slide off easily.
  • Use a heavy pan and keep the tortillas wrapped in a clean tea towel so they stay soft while you fill them.

Storing and freezing

Keep the bean and rajas filling in the fridge for up to 3 days and reheat until steaming hot all the way through. Assemble the tacos fresh.

Questions

Can I use jarred poblanos or other chillies?

Yes. Roasted peppers from a jar are a mild stand in, or use two green peppers charred in the same way with one fresh jalapeño for heat.

Are these tacos vegan?

Yes. The pot beans, tortillas, pickled onions and rajas contain no animal products. Add cheese or cream only if you do not need them to be vegan.

How hot are poblano chillies?

Poblanos are mild, with a gentle warmth that varies from chilli to chilli. Add a sliced jalapeño if you want more heat.
