Method
- 1
Mix the flour, semolina and salt in a bowl. Add the olive oil and warm water and knead for 5 minutes into a smooth, soft dough. Wrap and rest for 30 minutes.
30 min - 2
For the filling, warm the mozzarella, cheddar, milk and lemon zest in a small pan over a low heat, stirring, until melted and thick. Spread on a plate and chill for 15 minutes, then shape into 8 flat discs about 5 cm wide.
15 min - 3
Roll the dough very thin, about 2 mm. Cut 16 circles 9 cm wide. Put a cheese disc on 8 of them, brush the edges with water and top with the other circles. Press the edges firmly to seal.
- 4
Heat the sunflower oil in a deep pan to 180C, or until a scrap of dough sizzles and turns gold in 20 seconds. Fry the seadas 2 at a time for about 2 minutes, turning once, until deep golden and puffed. Drain on kitchen paper.
2 min - 5
Warm the honey in a small pan for 1 minute. Serve the seadas hot with the honey spooned over.
