Tips
- Use eggs that are a few days old. They peel more easily than very fresh ones.
- Fry the peeled eggs in a little oil until blistered for a richer, restaurant style roast.
- Serve with parathas, appam or crusty bread to soak up the sauce.
Storing and freezing
Cool within 1 to 2 hours. Keeps for 2 days in the fridge in a covered tub. Reheat gently until steaming hot all the way through. Do not freeze, as boiled egg whites turn rubbery.
Questions
Can I make egg curry ahead?
Yes. Make the sauce up to 2 days ahead and boil and add the eggs on the day. The sauce reheats well.
Is Kerala egg curry gluten free?
Yes, as written. All the ingredients are naturally gluten free. It is not egg free or vegan.
How do I stop the egg yolks turning grey?
Do not boil the eggs for more than 9 minutes and cool them in cold water straight away. Overcooking gives a grey ring.
