Method
- 1
Mix the flour, yeast and 1.5 teaspoons salt. Add the warm water and 2 tablespoons oil and knead for 8 minutes into a smooth, soft dough. Cover and leave somewhere warm for 1 hour, until doubled.
60 min - 2
For the filling, mix the beef, pork, onions, garlic, spices, 1 teaspoon salt, pepper, fresh coriander and 100ml water. Squeeze together well so the filling is wet and sticky. This is what makes the loaf juicy.
- 3
Heat the oven to 220°C (200°C fan) and put a baking tray in to heat. Divide the dough in 2 and roll each piece into a 28cm circle.
- 4
Spread the filling over the first circle, leaving a 2cm border. Lay the second circle on top, pinch the edges together and fold over to seal. Cut a small steam hole in the centre.
- 5
Brush with the remaining oil. Slide onto the hot tray and bake for 25 minutes, until deep golden and the meat is cooked through.
25 min - 6
Rest for 10 minutes, then cut into wedges. Serve warm with pickled cabbage or a sharp tomato salad.
