Method

  1. 1

Mix the gram flour with the carom seeds, chilli, turmeric and 1/2 teaspoon salt. Add the 2 tablespoons yoghurt and the oil and rub together. Add 2 to 3 tablespoons of water to make a firm, smooth dough. Knead for 2 minutes.

  2. 2

Divide the dough into 4 and roll each piece into a log about 1.5 cm thick. Bring a pan of water to the boil, add the logs and boil for 12 minutes, until they float and feel firm.

  3. 3

Lift the logs out and keep 150 ml of the cooking water. Leave to cool for 5 minutes, then slice into 1.5 cm rounds.

  4. 4

Heat the ghee in a wide pan over a medium heat. Add the cumin seeds, then the onion and cook for 8 minutes until golden. Stir in the ginger and garlic for 1 minute.

  5. 5

Add the ground coriander, chilli powder and turmeric. Whisk the 200 g yoghurt until smooth, then pour it in off the heat, stirring well. Return to a low heat and cook for 3 minutes, stirring, so it does not split.

  6. 6

Add the reserved cooking water, the remaining 1/2 teaspoon salt and the sliced gatte. Simmer gently for 10 minutes until the gravy has thickened and the gatte are soft. Stir in the garam masala and coriander.
