Mix the flour, yeast, sugar and salt in a large bowl. Add the first 2 tbsp olive oil and the warm water and mix to a soft dough.

  2. 2

Knead for 8 minutes on a floured surface until smooth and stretchy. Put in an oiled bowl, cover and leave somewhere warm for 1 hour, until doubled.

  3. 3

Heat the oven to 240°C (220°C fan) and put two baking trays in to heat up.

Mix the mozzarella and halloumi together. Divide the dough into 6, roll each ball into a circle about 18 cm wide and 4 mm thick.

  5. 5

Lay the circles on baking paper. Scatter the cheese across, leaving a 1 cm border, then sprinkle with sesame seeds and brush the edges with the remaining 2 tbsp oil.

  6. 6

Slide the paper onto the hot trays and bake for 8 to 10 minutes, until the edges are golden and the cheese is bubbling.
