Method

  1. 1

Heat the oven to 200°C (180°C fan). Heat the oil in a pan and cook the red pepper for 5 minutes until soft. Add the rice and cook for 2 minutes until hot all the way through.

    7 min
  2. 2

Warm the refried beans in a small pan for 3 minutes until steaming hot.

    3 min
  3. 3

Warm the tortillas for 10 seconds each in a dry pan or the microwave so they roll easily.

  4. 4

Spread each tortilla with beans, then top with rice and pepper and a third of the cheese. Fold in the sides and roll up tightly.

  5. 5

Place the burritos seam side down in a baking dish. Pour your ready made salsa roja (see the base recipe) over them, then scatter with the rest of the cheese.

  6. 6

Bake for 15 to 20 minutes, until the cheese has melted and the salsa is bubbling around the edges.

    16 min 40 s
  7. 7

Top with soured cream and spring onion, and eat with a knife and fork.

Tips

  • Heat the tortillas before rolling and do not overfill. A stiff cold tortilla splits as soon as you fold it.
  • Wet burritos are a Mexican-American restaurant favourite. For a closer taste of home style Mexican food, fill with shredded beef or chicken instead of rice.
  • Bake them seam side down so they stay shut.

Storing and freezing

Cool within 2 hours, cover and keep in the fridge for up to 3 days. Reheat in a hot oven until steaming hot all the way through. Do not reheat rice more than once.

Questions

What makes a burrito wet?

A wet burrito is baked or served smothered in sauce and melted cheese, then eaten with a knife and fork rather than by hand.

Can I freeze them?

Yes. Freeze the filled, rolled burritos before adding sauce. Thaw overnight in the fridge, then add sauce and bake as above.

Can I make them gluten free?

Swap the flour tortillas for large gluten free wraps, which also cover the dairy and wheat needs of coeliac families. Check labels on the beans and salsa too.
